The Vicara Wine cellar was born in the lands of Monferrato and is deeply linked to it. It is a territory in which ancient castles alternate with huge vineyards that surround the villages on the hills.
Each bottle of Cantina Vicara sees the light thanks to a deep union between the tradition of the territory and avant-garde winemaking techniques. There is a biodynamic cultivation of vines, with refined grapes typical of Monferrato (Grignolino, Freisa and Barbera), combined with courageous innovations of cru and aging. The land covers an area of 70 hectares, of which 40 are vineyards, in the municipalities of Salabue, Serralunga di Crea, Ozzano, Treville and Rosignano Monferrato, depending on the different geological and pedoclimatic characteristics. The vineyards are between 7 and 70 years old, raised in traditional Guyot, with very short pruning and reduced yields, to increase the quality of the grapes, together with the maintenance of spontaneous grassing; this procedure safeguards the biodiversity of the territory and does not require invasive interventions. The anti-parasitic fight is carried out according to the natural techniques of eco-friendly agriculture, to offer a safer product. The harvest, carried out at the best moment of ripening of the grapes, is carried out by hand. At the end of the vinification process, conducted in the Cascina Madonna di Rosignano Monferrato according to a skillful combination of peasant tradition and modern technologies, the wines are aged in steel or wood (barrique or tonneau), then bottled and, after the necessary rest, they leave for all the destinations on the planet.
